Growing up, crepes were a common breakfast in our home. My mum called them thin pancakes. These crepes are so delicious and you can fill them with a variety of sweets and fruits and even meat. In our family, crepes are not for breakfast only but we have them for lunch, dinner with the different fillings. Just like the easy waffles, these crepes are a favorite of my kids.

What are Crepes?

Crepes are very thin pancakes that originated in France. Crepes can be sweet or savory. Sweet crepes have sweet fillings like strawberries, cinnamon sugar, Bananas, chocolate spread, cream cheese, whipped cream while savory crepes have fillings like bacon, sausages, vegetables, mushrooms, tomatoes, and cheese.

Best Crepes Recipe

This simple crepes recipe is so delicious and the best. All you need are five common pantry ingredients. You do not have to worry about hand mixing, just put all the ingredients in the blender and you have your crepe batter. Bookmark this recipe because this is the best crepes you will ever have!

Ingredients for Crepes

Flour: I use all-purpose flour

Eggs

Milk: I use whole milk, substitute with low-fat milk or almond milk.

Sugar: I use white sugar, you can substitute for brown sugar

Butter

Salt

flour, milk, eggs, melted butter, salt and sugar for crepes

How to make Crepes

Add all the ingredients in a blender and blend until smooth with no lumps. Let it rest for 30 minutes

Put a skillet on medium heat, grease with butter, and pour a little of the crepe batter on to the skillet.

Twirl the pan to spread the batter evenly on the skillet, cook until bubbles appear and flip.

Repeat until all batter has been used up.

How to Serve

For sweet crepes, some of the best fillings are chocolate spread, strawberries, homemade strawberry jam, Orange jam, peanut butter and caramel. For savory crepes, you can use vegetables, mushrooms, minced meat, chicken, cheese, eggs, or ham.

To fold your crepes, place the crepe on a plate, add the filling, and spread in a thin layer in the center of the crepe. Fold the crepe in half and fold over again.

To roll your Crepes, place the crepes on a plate, add the filling and spread in a thin layer in the center, roll the crepes and serve.

HOW TO STORE

Leftover Crepes can be stored in the refrigerator or freezer. Make an extra batch and store in the fridge or freezer, your family will love it.

Refrigerator: To store in the refrigerator for a few days, 3 days. Place in a single layer or separated by parchment paper in an airtight bag.

Freezer: To freeze, place in a single layer, or separated by parchment paper in an airtight freezer bag. To avoid your pancakes sticking together, it is important they are in a single layer or separated by wax paper or parchment paper.

HOW TO REHEAT

Microwave: Place frozen crepes on a plate and microwave for 10- 20 seconds or until hot.

Oven: Arrange in a single layer on a baking sheet covered in aluminum foil, place in a preheated oven at 350F for 7-10minutes or until hot.

TIPS

  • Crepes batter should be lump-free, use a blender to mix.
  • Brush oil or melted butter on your griddle or skillet before putting the batter, you may need to brush before each crepe.
  • Once the tiny bubbles appear, the crepe is ready to be flipped, for the other side to brown.
  • Leave your batter to rest for at least 30 minutes or make the batter and keep in the fridge for 24 hours before making the crepes.

Frequently Asked Questions

How do you flip crepes without breaking it?

Because crepes are very thin, flipping the crepes may be difficult for some. I flip my crepes with my hands. I grab the edge of the crepes and flip it over.

Is Crepe mix different from Pancake mix?

Unlike pancake mix, crepe batter does not have baking soda, a raising agent. The crepes batter is thinner than pancake batter and cooked crepes are thin and flat while pancakes are fluffy and thicker.

How do you spread Crepe batter?

To spread crepe batter, after pouring the batter on the skillet. Pick up the skillet and swirl to cover the pan in a thin layer.

  • 2 cups flour
  • 4 Eggs
  • 3 cups Milk
  • 3 Tablespoon Sugar
  • 3 Tablespoon Butter
  • ½ teaspoon salt

Instructions

  • Add the flour, milk, eggs, sugar, melted butter, salt, and milk to the blender and belnd unitl smooth without lumps.
