This mini pancake cereal also called cereal pancake is everything you need in a breakfast! It is crispy, delicious, and tastes so good, just dig in with a spoon. Pancakes in small sizes, you will keep asking for more.
Pancakes, french toast, and waffles are my kids’ favorite breakfast, so I always find new and interesting ways to make breakfast time interesting with their favorites. When I bumped into the mini pancake cereal on Tik Tok, I knew I had to make these.
I love Tik Tok challenges, although I am not much of a dancer and my teenage daughters have refused to teach me the renegade and savage dances, I make do with the ones I can do, check out my handsign challenge, my middle school students loved it! I digress, mini pancake cereal!
What is Pancake Cereal?
Pancake cereal is made by using the pancake batter to make pancakes as small as dimes or nickels.
These pancakes are made so small, they look like cereal. You put them into a bowl, serve with your favorite topping, which maybe maple syrup, strawberries, honey, or even milk! But be sure, to pour your milk over it to avoid it being soggy. No one likes soggy pancakes.
Before I share my cereal pancake recipe with you, let me warn you. I think the real challenge is not in getting the recipe right, thanks to my easy step by step recipe, the challenge is the patience to make the pancakes small! As a mum and middle school teacher, my patience level is 100% but making these cereal pancakes took a bit of time but it was worth it!
My kids loved it so much, I had to make it with some colors added to it. These teeny weeny bits of goodness have become a favorite of the whole family.
Why you should make the pancake cereal?
You are probably reading this because you came across a post on Instagram or Tik Tok and you are wondering if to join the challenge and make some. One good reason to join this challenge is to make something and have fun as I said in my 20 things to do when bored at home, joining social media challenges is a fun and interesting way to interact and have fun with social distancing.
Another good reason is they taste so good, imagine you two favorite breakfast: pancakes and cereal merged into one. It is definitely a must-try! although I am not much of a fan of the Dalgona Coffee after trying it, it was too coffee-y for my coffee-loving self while my husband loved it. As they say, opposites do attract. I hope you are sold on the idea of this pancake cereal, so it is time to make some.
TIK TOK Pancake Cereal Recipe
To make the Tik Tok Pancake cereal recipe, you need a good pancake batter, if the batter is to thin, it is going to be runny and if too thick, it will be hard to get out of the squeeze bottle. While some Tik Tokers are making it with a store-bought mix, my opinion about food is, I need to know what goes into what I feed my family and this recipe I will be sharing with you is failproof and better than the store-bought mix and you get the satisfaction of making it yourself.
Tools
Mixing bowl– To mix the pancake batter. A little goes a long way with these tiny pancakes, so you don’t need to mix too much batter.
Spatula or Kebab stick – Watch my Tik Tok video on how I use kebab stick to turn the pancakes but if you do not mind your pancakes sticking together, use a flat spatula to flip your pancakes.
Squeeze bottle or Piping bag– I use a squeeze bottle but feel free to clean out old mustard or ketchup squeeze bottle.
Nonstick pan or griddle– If you use a griddle, you can make a lot at once but good old non-stick pan will do as well.
INGREDIENTS
Plain flour – I love to use all-purpose flour because I always have it available in y]the house but feel free to use whole wheat flour or mix your flour half and a half; half all-purpose flour and half whole wheat flour.
Baking powder– You need baking powder to get the right texture for your pancakes.
Sugar– For the sweetness, I used white sugar, adjust the sugar based on preference or skip altogether.
Salt– Salt will give a balance to the sweetness of
Flavoring – Nutmeg, cinnamon or vanilla extract
Eggs
Milk– I use whole milk but you can substitute with any milk of your choice based on preference or dietary needs.
Butter /Oil– I used oil in this recipe but melted butter adds a favor if used and is recommended.
Food Grade Color – Optional. I used a drop of red to achieve the color, you can use any color you desire.
How to make cereal pancakes
In a mixing bowl, combine all the dry ingredients; flour, baking powder, sugar, salt.
In another bowl, combine the egg, milk, and oil and whisk.
Add the liquid mixture into the dry ingredients and mix until well combined. Leave to rest for a few minutes.
Pour the batter into a squeeze bottle or washed mustard or ketchup bottle.
Place a nonstick skillet on medium heat or turn on an electric griddle, when hot, squeeze the batter to make circles as small as a dime.
Let it cook for a few seconds or until bubbles appear, turn to the other side to cook.
Pour in a bowl and repeat until all batter is done is done
Serve with toppings of your choice.
Colored pancake cereal– split your batter into two to four and add food coloring of your choice to achieve the colors you want then follow the same directions to make your pancakes. I use red food coloring in mine because it was the only one I had in my pantry.
Chocolate pancake cereal – Add unsweetened cocoa powder to the batter and follow the directions. You might have to add a little bit more sugar if adding cocoa powder to balance the bitter taste of the chocolate powder.
Funfetti pancake cereal– Add sprinkles to your pancake mix before cooking to get a rainbow-looking pancake.
Serving Suggestion
Personally, I like to enjoy mine with fruits and maple syrup but my daughter likes colors and enjoys hers with chocolate chips and sprinkles. Some common toppings are maple syrup, honey, chocolate syrup, marshmallows, Nutella, strawberries, bananas, blueberries, and even milk! If you will like to enjoy with milk, remember to pour your milk over your pancake cereal to avoid it getting soggy.
How to Store
Leftover Pancakes can be stored in the refrigerator or freezer. You can make an extra batch to snack on while watching movies with the family. Just pop in the microwave for a few seconds and the delicious tiny pieces of goodness is ready. Make an extra batch and store in the fridge or freezer, your family will love it.
Refrigerator: To store in the refrigerator for a few days, 3 days. Place in a single layer in an airtight bag.
Freezer: To freeze, place in a single layer in an airtight freezer bag. To avoid your pancakes sticking together, it is important they are in a single layer or separated by wax paper.
To reheat your pancake cereal, you can microwave or just put it in the oven.
Oven: Put on a baking sheet covered in aluminum foil, place in a preheated oven at 350F for 10-12 minutes, or until hot.
Microwave: Put in a microwave-safe plate and microwave until hot. pancakes cereal may get a little soggy but they will still taste as good.
TIPS
- To avoid your pancakes sticking together, use a kebab stick or chopstick to flip.
- Follow the step by step recipe to avoid thin and runny pancake mix.
- Remember, to grease your skillet or griddle with oil or butter to avoid it being too brown or burnt.
- Do not squeeze too much batter at a time so your pancakes are not too big.
- Start cooking on low heat to give enough time to squeeze enough to fill the skillet or griddle.
- Be creative! make variations.
- Keep your pancakes warm by putting them in the oven, it takes time to make them this size and they get cold easily.
- It does not have to be perfect! You do not need to have it the same size. just have fun making them.
- To know how to flip, Once you see the tiny bubbles, it is time to start flipping your pancakes to cook the other side.
