Cauliflower Stir Fry
This easy, low carb cauliflower stir fry is delicious and ready in 15 minutes. This recipe is keto, gluten-free, and a healthy great substitute for fried rice.
- 1 cauliflower head (riced)
- 1 egg scrambled
- 1 Tablesppon sesame oil
- 2 Tablespoon Olive oil
- 1 cup Mixed bell peppers
- 2 Tablespoon low sodium soy sauce
- ½ Teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ Tablespoon garlic
- 2 Tablespoon onions
Place a wok or pan on medium to high heat. Add sesame oil, olive oil, and sautee the garlic, onions, mixed vegetables.
Stir in the cauliflower rice, black pepper, paprika, soy sauce, and fry for about 3 minutes.
Pour in the scrambled eggs, add the kosher salt and adjust the taste.
Serve and enjoy.
Cauliflower fried rice is best enjoyed fresh or within 24 hours.
Cooked cauliflower fried rice gets mushy when frozen and thawed.
Cauliflower rice cooks fast and shouldn't be overcooked to avoid it getting soggy.
